背景

アルブミンは、家畜や人間の血清に最も多く含まれるタンパク質です。アルブミンは、脂肪酸、ホルモン、金属イオンの結合と輸送、浸透圧とpHの維持、外因性毒素や脂質の酸化産物の結合などの機能を有しています (Bertucci,2002) 。ウシとヒトのアルブミンは、糖質を含まない3つの相同ドメインからなる単量体タンパク質です（Peters, 1985 and Sugio, 1999）。
ウシアルブミンの大規模な精製法の開発により、その機能は診断、細胞培養、微生物学的な応用へと発展し（Mannuzza 2002）、ELISA、イムノブロット、免疫組織化学を含む多くの生化学的応用を可能にしました。ウシ血清アルブミンはまた、細胞や微生物培養の栄養剤としても使用されます。
